Add the bunch of green parsley for taste, from which the leaves are kept and chopped.
After about 20 min. from the boil, take a little soup aside, and in a bowl rub the egg yolk well, with a little salt and 5 tablespoons of sour cream. Add chicken broth over sour cream and then put in soup. Season with salt, pepper and drizzle with a little vinegar (if possible apples, it's very healthy). Add the chopped parsley leaves, bring to a boil then turn off the heat and cover with a lid, so that all the flavors combine, and create the consistency needed for a soup.
