    Heat oven to 375°F. Unroll dough into 1 large rectangle. Firmly press perforations to seal. Shape into 12x8-inch rectangle. Cut crosswise into 8 strips (1 1/2x8 inches each). Spread 1 1/2 teaspoons cream cheese down center of each strip.

    Top cream cheese with strawberry slices. (Break larger strawberry slices in half to fit on dough.) Fold dough over lengthwise to encase filling; press edge to seal in filling, forming each strip into long filled rope. Tie rope of dough into knot; place on large ungreased cookie sheet. Repeat with remaining 7 strips of dough. Brush knots with melted butter.

    Bake 10 to 12 minutes or until golden brown. In small bowl, mix powdered sugar and hot water until smooth. Spread over each warm knot; top immediately with sprinkles. Serve warm.

How to Make Strawberry Cream Cheese Danish?
• First, start with puff pastry, unfold the puff pastry sheets and lay out on a flat surface
• Use a knife to cut along the fold marks to create three equal sized strips
• Cut each strip I half to make a total of 12 rectangles and place to prepared sheet pans
• With a paring knife lightly score the dough by cutting a border ½ -inch from the edge, do not cut through the pastry
• Use a fork to poke a few holes into center area of each pastry (this allows the outside border to rise and puff up while the center stays lower and holds the filling)
• In a small bowl, stir together cream cheese and strawberry jam
• Place a dollop of the cream cheese mixture in the centers of each pastry and spread it within the scored area
• Top the cream cheese with the sliced strawberries
• Brush the edges of the pastry with beaten egg
• Bake for 15-18 minutes until golden and puffed

Sweet & Creamy Dessert Bars

I originally made this recipe with my husband’s favorite ingredient in mind—cream cheese. I also needed to pick a few seasonal ingredients to work with so for this first one I chose STRAWBERRIES (MY FAV!).

The result was these sweet and creamy Strawberry Cream Cheese Bars. They have FOUR delicious layers:

  • Sugar cookie crust
  • Creamy white chocolate
  • Strawberries
  • Whipped Cream

They’re the perfect combination of dense and light, sweet and tart. Needless to say, both my hubby and I absolutely loved these bars!


Roasted Strawberry Cream Cheese Rolls

Roasting fresh strawberries intensifies their flavor, and makes a sticky-sweet filling in these rolls. In addition to lending great flavor to the dough, cream cheese makes them unbelievably tender and fluffy.

Ingredients

  • 1 quart (567g) fresh or frozen strawberries*
  • 1/2 cup + 2 tablespoons (124g) granulated sugar, divided
  • 4 teaspoons Instant ClearJel
  • 1/2 teaspoon cinnamon
  • 2 teaspoons grated orange peel (zest)

*If you use frozen berries see "tips," below.

  • 3/4 cup (170g) milk
  • half an 8-ounce package (113g) cream cheese
  • 2 tablespoons (28g) unsalted butter
  • 2 tablespoons (25g) granulated sugar
  • 1 large egg
  • 2 teaspoons active dry or instant yeast
  • 1 teaspoon (6g) salt
  • 3 1/4 cups (390g) King Arthur Unbleached All-Purpose Flour
  • 2 ounces (57g) cream cheese, at room temperature
  • 1 cup (113g) confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 to 2 teaspoons milk or cream

Instructions

Preheat the oven to 350°F. Line a baking sheet with parchment.

To make the filling: Wash and trim the top of the strawberries to remove their leaves. Toss the strawberries in a bowl with 2 tablespoons of the sugar. Spread the berries in a single layer on a baking sheet and bake for 25 to 30 minutes for fresh, or 40 to 45 minutes if baking from frozen. The berries will collapse somewhat and give up their juices. Remove from the oven and let cool for 10 minutes on the pan.

Scrape the berries and any liquid from the pan into a medium bowl. With a fork or potato masher, break up the berries until they're in 1/4" to 1/2" chunks. Mix together the remaining 1/2 cup sugar with the ClearJel and cinnamon and sprinkle over the roasted berries. Stir well. Add the orange zest and stir. Set aside.

To make the dough: Weigh your flour or measure it by gently spooning it into a cup, then sweeping off any excess. Place the milk, cream cheese, and butter in a microwave-safe bowl and heat for 90 seconds, or until lukewarm. Transfer to a large mixing bowl and add the sugar, egg, yeast, salt, and flour. Mix and knead to make a soft dough, scraping down the sides of the bowl as needed. The dough should eventually bounce back when you give it a poke.

Cover the dough and let rise for 45 minutes to 1 hour, until almost doubled and puffy-looking.

To assemble: Turn the risen dough out and pat it into a 16" x 12" rectangle on a piece of parchment the parchment will both help you roll the dough into a log, and transport it to its pan. Spread the strawberry filling over the dough, leaving a 1/2" strip along one long edge uncovered.

Starting with the filling-covered long edge, roll the dough into a log, pinching the seam to seal it. Refrigerate the log for 30 minutes this will help set the filling, making the log easier to slice.

Slice the log into 12 equal pieces a piece of dental floss, looped around the log and ends pulled in opposite directions, makes a nice clean cut. Place the rolls, cut side up, in a greased 9" x 13" pan.

Cover the pan with plastic and let rise for 45 to 60 minutes, until puffy-looking. While the rolls are rising, preheat the oven to 350°F.

Uncover the rolls and bake them for 28 to 30 minutes, until they're a light golden brown. Remove them from the oven and cool to lukewarm on a rack.

To make the frosting: Beat the cream cheese and confectioners' sugar together until smooth, with no lumps remaining. Add the vanilla, then the milk (or cream) 1/2 teaspoon at a time until the frosting is spreadable but still thick. Spread or pipe over the rolls while they're still slightly warm.

Store any leftover rolls, well wrapped, in the refrigerator for a couple of days. Freeze for longer storage.

To use frozen berries, thaw them first (the microwave works fine) and drain off the excess juice before weighing out and roasting.

Italian Knot Cookies

Oh, you should be proud of me. This is the post and recipe that almost never happened.

For the last few nights I have been all-consumed by… Gah!… Hallmark Christmas movies. I was finally, finally, able to pull myself away from those sappy, ridiculously predictable, but completely addictive, Christmas movies long enough to post this recipe for you before the holidays! I’ll make this quick so that I can get back to those awfully delightful movies you can make these Italian Knot Cookies too.

The recipe I am sharing today is a traditional Italian Christmas cookie. These are the holiday cookies of my childhood. I remember how they would take over the kitchen table on cooling racks, with their slow-dripping lemon icing falling into thick, sweet, droplets onto the awaiting parchment paper. My brothers and I would reach under the racks to scoop up the icing remnants, like my kids do now when we make them. I remember how the cookies, in their Christmas-themed tins, would overflow onto the kitchen counter top and the dining room table, with their colorful sugary sprinkles. We anticipated ruining our appetites with these cookies all season long.

Traditional Knot cookies are a little dry – in a good and delicious kind of way. However, in my grandmother’s recipe binder I found a handwritten note explaining how to make these cookies just a tad softer using cream cheese (say no more, I’m in!). Her note read “with half cream cheese.” Half… Just half. Half of what we wondered. Years ago we’d debated whether it meant 1/2 cup or 1/2 of a package. I opted to go with half of an 8 ounce-sized package. Whether or not that is correct, I will never know. However, these cookies are perfectly sweet, slightly soft, and delicately crumbly, and they have been long taste-tested by my family over the years. The consensus is that they taste just like Nana’s. What an honor.

I’m grateful that my children are growing up with these traditional cookies too (lovingly referred to as “Big Nana’s Cookies” in my home), especially since my mother can’t make them to save her life, bless her heart. Although her Italian Knot Cookies do provide us with a dose of comic relief, so we usually include her in the Knot making purely for fun. She’s a good sport. Love you, mom.

Unlike some Italian Knot Cookies where the dough is rolled out into a concentric circle forming the appearance of a knot, these cookies are rolled out and tied into actual loose knots. They are baked for 15 minutes, with care not to overcook. Then they are dipped into the sweet, thick, icing. There are two types of icing my grandmother would make, one with anisette for the grown-ups (like the original recipe suggests) and the other was a lemony icing that we ALL liked. I’ll share both. Lastly, they are sprinkled (or loaded up!) with colorful nonpareils.

These cooki… Wait... This is the movie where two strangers are stranded in a snowstorm at the airport and they constantly bicker, but then they end up sharing a car to drive to the city, and the woman’s fiance is waiting for her there, but it’s so obvious that she has feelings for the stranger-man now, even though she refuses to acknowledge that and… eek! Ok, I won’t keep you any longer from making these cookies. Enjoy some with a ridiculously predictable movie, too!

Make Sponge: In a small bowl, stir together water, sugar, yeast, and flour until combined. Let sit until bubbling and proofed, 15 minutes.

Make Dough: In the bowl of a stand mixer, combine sponge, butter, egg, yogurt, sugar, salt and vanilla extract. Add flour and blend one minute. Using the dough hook attachment, knead dough until it has come together in a smooth ball, about 5 minutes.

Lightly butter a large bowl. Place dough in bowl and cover with plastic wrap followed by a kitchen towel. Let dough rise in a warm place until doubled in volume, about 2 hours.

Make Filling: In a small bowl, mix together cream cheese, yogurt, sugar, lemon juice, and flour until well combined.

Assembly: On a lightly floured surface, roll dough out into a 10′′ x 15′′ rectangle. Transfer dough to a baking sheet lined with parchment paper.

Either visually or using your fingers to make light marks in the dough, divide the rectangle into three equal, vertical columns. Fill center column evenly with cream cheese spread. Spread strawberry preserves on top of cream cheese filling.

Make braid by cutting horizontal, one-inch strips down the length of the outer columns of the dough. Make sure that you have an equal number of strips on both sides. Pull top left strip down across the center of the dough. Pull top right strip down on top of it. Continue to pull strips of dough across the bread, alternating sides, until strips have run out.

Cover braid with a dish towel and let rise until puffy and risen in volume, about one hour.

Preheat oven to 375°F. In a small bowl, lightly beat remaining egg with one teaspoon of water. Brush top of braid lightly with egg wash.

Strawberry Cream Cheese Pie is the perfect dessert for spring and summer, made with a simple crust, sweetened cream cheese and fresh strawberries.

Ingredients

Pie crusts:

  • 1 1/4 cups flour
  • 1/4 teaspoonful salt
  • 1/2 cup unsalted butter , frozen and diced
  • 1/4 cup ice water

Strawberry cream cheese filling:

  • 5 cups fresh strawberries , (about 1 1/2 pounds)
  • 1/2 cup water
  • 1 cup sugar
  • 3 tablespoons corn starch
  • 4-5 drops red food coloring
  • 8 ounce cream cheese
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoonful vanilla extract
  • 1 cup strong cream

Pie crusts:

Add flour, salt and butter to a food processor and pulse, add the water (I spooned the water directly out of the cup of ice water directly into the food processor to make sure it is still ice cold) through the gutter one tablespoon at a time until the dough begins to crumble slightly (do not let it become a bullet).

Empty it into a sheet of plastic wrap and quickly press it down into a ball (you do not want the heat from your hands to melt the butter) and cool for 4 hours before rolling it out for use.

Strawberry cream cheesecake:

Preheat the oven to 375 degrees and place a pie plate with your crust.

Line with parchment paper and add beans or pie scales to hold the crust in place.

Back to 18-20 minutes until golden brown.

Add 2 cups of strawberries to a saucepan with water, sugar, cornstarch and food coloring.

Boil 4-5 minutes until thickened, whisk constantly to decompose the strawberries, then remove from the pan and allow to cool. 30 minutes .

In a large bowl, add cream cheese, sugar, lemon juice, vanilla extract, and use a hand mixer to whisk well until creamy.

In another bowl, add heavy cream and whisk on medium speed until it has stiff peaks.

Carefully fold the whipped cream into the cream cheese filling.

Add cream cheese mixture to the crust.

Halve the remaining 3 cups of strawberries, and add to the crust.

Top with strawberry sauce and refrigerate 4 hours before serving.

Strawberry Cream Cheese Dough Knots - Recipes

1/2 teaspoon vanilla extract

1 1/4 cups all-purpose flour, plus more for dusting the work surface

2/3 cup confectioners' sugar

8 tablespoons cold unsalted butter, cut into 1/2-inch cubes

2 oz. bittersweet chocolate, finely chopped

1 tablespoon unsalted butter, at room temperature

8 oz. cream cheese, softened

1/2 cup confectioners' sugar, sifted

1/2 teaspoon vanilla extract

2 tablespoons milk or cream

Fresh strawberries, sliced (approximately 12 oz.)

Melted bittersweet or semisweet chocolate, for drizzling (optional)

To make the tart shell, whisk together the egg yolk, cream and vanilla in a small bowl set aside. Place the flour, sugar, and salt in a food processor. Process briefly to combine. Scatter the butter pieces over the flour mixture process to cut the butter into the flour until the mixture resembles course meal, about fifteen 1-second pulses. With the machine running, add the egg mixture and process until the dough just comes together, about 12 seconds. Turn the dough onto a sheet of plastic wrap and press into a 6-inch dish. Wrap in plastic wrap and refrigerate at least 1 hour or up to 48 hours.

Remove the dough from the refrigerator. (If refrigerated for more than an hour, let stand at room temperature until malleable.) Unwrap and roll the dough out on a lightly floured surface to a 13-inch round. Transfer the dough to a 9-inch tart pan. Mold the dough to the sides of the tart pan and remove the excess off the top. To make the filling, beat together the cream cheese and confectioners' sugar in a bowl on medium-high speed until smooth. Blend in the vanilla and milk or cream. Spread the cream cheese mixture over the cooled ganache in the tart shell.

Starting from the outside and working toward the center, place the sliced strawberries in concentric circles slightly overlapping each other. Gently press the berries into the cream cheese mixture to help keep them in place. Drizzle with melted chocolate, if desired. Chill until ready to serve.
