The recipe for making Perugian kisses at home is really simple. Easier to make than you might imagine and very similar to the famous kisses ... with this recipe of my Perugian kisses explained step by step you can prepare with your hands the chocolates to give for Valentine's Day. Method

How to make Perugian kisses

Melt the milk chocolate with the butter in the microwave or in a double boiler

Add the nutella and chopped hazelnuts
Mix everything with a spoon to mix all the ingredients well. Place the mixture in the freezer for a quarter of an hour

Resume the mixture and form 12 balls that you will place on the parchment paper

On the surface of each ball place a hazelnut exerting a slight pressure to make it set in the chocolate. Put the chocolates to rest in the freezer for half an hour to harden them.

Melt the dark chocolate in the microwave or bain-marie and let it cool.
Take back the kisses and with the help of a fork, dip them in chocolate until they are completely covered with chocolate.

Place them on a surface covered with parchment paper and let them dry completely.

Once the chocolate has hardened, lift your kisses off the wire rack.

Set 40 aside hazelnuts. Put the remaining hazelnuts in the bowl and blend 3/5 Sec. Vel. 5. They must become a grain.

Add 75 g of bitter cocoa and 250 g of Nutella and amalgam 15 Sec. 2.

Put the mixture in a bowl with the spatula. From the mixture make 40 balls and, in the center of each, put a whole hazelnut. Give the classic shape of Perugian kisses.

Keep the kisses in the refrigerator for 3 hours and let them harden. If you don't have much time, put them in the freezer for 30 Min.

Dissolve 250 g of dark chocolate in water bath. With a toothpick dip the kisses in the chocolate and put them to dry on parchment paper.

When they are dry, wrap the kisses in foil, one by one.


Preparation tips

Preparing kisses at home is extremely simple and fast, just follow a few small tricks for a perfect result with each preparation:

  • Peel the hazelnuts to avoid a bitter taste.
  • Do not chop them excessively in order to keep the right crunchy consistency inside the chocolates.
  • Keep the heat to low and make sure that the water touches the second saucepan to get it cooked in a bain-marie and prevent the chocolate from burning.
  • Mix with a spatula, mixing the grain well with the rest of the ingredients to obtain an even distribution and therefore the right consistency.
  • Let it rest in the freezer for about half an hour before forming the chocolates in order to make the mixture mouldable.
  • Lightly press the hazelnuts into the chocolate so that it does not fall out when you dip them in the chocolate.
  • Be careful when melting chocolate in a double boiler, stirring often as it burns easily.
  • Help yourself with a fork in dipping the chocolates in melted dark chocolate and lightly tap the fork on the edge of the bowl in which it is placed in order to remove the excess and smooth the glaze.
  • Let it rest in the fridge to make the chocolate solid again.

How to prepare: Donuts with Baci Perugina cream

To prepare the Baci Perugina cream donuts, you must first whip the egg with the sugar and vanilla seeds in a bowl. When you have obtained a light and fluffy mixture, add the sifted flour and yeast, then the milk at room temperature. Mix.

Also add the melted butter at room temperature and mix until a homogeneous mixture is obtained. Transfer it to a mold of 6 donuts, greased and floured, filling each section by 3/4. Level and put in the oven, preheated to 180 °, for about 15 minutes.

Remove from the oven and allow to cool completely. When ready to serve, gently unmold the donuts, turn them upside down on a serving dish and fill each hollow with the spreadable cream. Sprinkle the Baci Perugina cream donuts with a little icing sugar to taste and serve.


Ingredients for baci perugina

Set aside about forty whole hazelnuts and put the rest in the mixer. Chop them coarsely, perhaps in two or three stages, to prevent the blades from heating the hazelnuts by making the oil come out.

Melt the milk chocolate in a double boiler.

Add the Nutella, which must not be cold, to prevent the chocolate from going crazy. You can spend 15 seconds on the mircoonde before adding it. )

Mix well, remove from the bain-marie, and add the sifted bitter cocoa.

Incorporate it well and add the chopped hazelnuts.

Transfer to a container and refrigerate for an hour the mixture must cool down to allow you to make balls, but it must not harden too much. If it gets too hard, leave it for a while at room temperature before working it.

Shape into balls and place a hazelnut in the center. Place in the fridge for half an hour.

Melt the dark chocolate in a double boiler.

Dip the base of the Perugian kisses in the chocolate and place on a tray lined with baking paper. Refrigerate for 10 minutes.

Transfer the Perugina baci on a wire rack and place the tray with parchment paper underneath. Cover the chocolates with dark chocolate.

Refrigerate 15 minutes (until the chocolate is solid again). I advise you to keep them at room temperature if it is not particularly hot, so that they do not get too hard! :)


The procedure for making these delicacies at home is very simple. First, you need to get one milk chocolate bar, cut it and melt it in a saucepan. After that, you will have to mix it and when you have finished making it you can pour the cream obtained into a bowl.

At this point, you will need to take approx 100 g of Nutella and 100 g of chopped hazelnuts. Stir in the previously created chocolate cream, taking care to mix the mixture.

Remember that when this new mix is ​​ready you can leave it to cool in the freezer for about 15 minutes. At that point, when the mix is ​​solid, you will have to create balls, trying to model the artisan baci perugina like the original ones. This can be done more clearly by placing a toasted hazelnut on each ball.

Finally, you have to put the kisses that are forming in the freezer and heat the dark chocolate like the milk one. When this is melted, you will have to wet each ball with hazelnut in the dark chocolate, then waiting for the latter to cool down.

After this last step, you can enjoy your desserts.
