This is the fastest soup I can make and it's my favorite. Right now I thought of preparing it for lunch, and I said to share the recipe with you.
- 3 medium or 2 very large potatoes
- 1 carrot
- 1/4 leek
- 1 parsley root (smaller)
- olive oil

RECIPE PREPARATION Quick, delicious and dietary soup:
Put the peeled potatoes and cut into small cubes in a pan with 1 liter of water and a little salt / delicately.
Finely chop the carrot, leek and parsley root (I prefer to cut them into thin strips, as for a wok). Add to the pan along with a little olive oil and pasta.
Let it simmer until the potatoes are soft (I try them with a fork) and then 5 minutes on low heat, reduce the juice a little. I like that thanks to potatoes and pasta the soup thickens a bit.
Serve with a little chopped greens on top. I put parsley.

if you don't want to froth the potatoes when they boil, rinse the potato cubes with cold water before boiling (also in cold water)
if you have croutons, they go great in soup as a serving suggestion
but usually, when I want to thicken a little the consistency of a soup, I put a little breadcrumbs (toast and given through a fine grater)
Dietary vegetable soup
For two weeks I started taking sports seriously and I automatically started cooking more dietetically. It's the second time I've made this soup in these two weeks and besides the fact that it's delicious, it's very filling and healthy,
I used the following vegetables for this soup:
1 broccoli, 1 cabbage, 5 potatoes,
red and white rice (about 150 gr), lentils (about 150 gr),
4-5 carrots, 1 small dried hot pepper,
water, 2 tablespoons olive oil, salt, borscht / lemon juice
Wash the rice and lentils in some water and then leave them in a bowl with water until the vegetables are clean. Cut the potatoes into squares, slice the carrots, finely chop the cabbage and spread the broccoli in small bunches. In a large pot we put the potatoes, carrots, rice and lentils drained and passed once more through a stream of water, chopped cabbage, chopped hot peppers and cover with water. Put the pot on medium heat and cover with a lid. When the vegetables are semi-cooked, add the broccoli bunches and leave until all is well cooked. At the end, add the salt soup, add borscht or lemon juice and two tablespoons of olive oil. We serve with gusto!
Potato cream soup with bacon
- In a pot, boil the peeled vegetables and cut them into pieces. When they are almost cooked, add salt and pepper to taste.
When the vegetables are cooked, separate them from the water in which they were boiled and strain them. I didn't like celery and bleach, I don't like their taste too much. After they have been passed well, like a fine puree, gradually add the water in which they boiled the vegetables, until the desired consistency of the cream soup is obtained. When the soup cools, it will become significantly thicker, so don't skimp on it.
Cut the bacon into thin slices and fry. Put it in a pan without the addition of oil, fry it in the fat that will melt from it.
The pan with the browned bacon is poured over the soup, along with the resulting fat. The soup thus becomes absolutely delicious, although not exactly dietary. I kept a few strips of bacon with which I decorated the plates with soup, along with some croutons and finely chopped green onions.
Cumin soup cheap, tasty recipe, good for the stomach
It is a controversial soup in my family: I adore it, my mother as well, my sister hates it. Dad doesn't eat it. But not because she didn't like it, but because at the technical boarding school where she stayed while she was at school, they were very annoyed with her. Probably because it was cheap and easy to make. Because, literally, it has some very cheap and simple ingredients, it doesn't have meat again croutons put at the end give a little texture to an otherwise very simple preparation.
