Recipe Preparation

  • Grill tomatoes, turning occasionally, until skins are blackened and split, about 4 minutes. Press through a sieve set over a medium bowl; discard solids. Whisk in anchovies, garlic, harissa, vinegar, and 2 tablespoons oil; season with salt and pepper.

  • Spoon half of sauce onto a platter. Place eggplants on top, season with salt, and spoon remaining sauce over. Let sit 30 min-utes to let flavors meld. Drizzle with oil, top with parsley, and serve with lemon wedges.

  • DO AHEAD: Smoky Tomato Sauce can be made 1 day ahead. Cover and chill.

Fit the cored tomatoes snugly in a disposable aluminum cake pan. Tuck a garlic clove into each tomato where the core came out. When the fire is ready, put the container of wood chips into the grill, next to the hot coals. Put the pan of tomatoes on the grill grate, across from but not directly over the hot coals. Cover, leaving the air vents open to keep the heat going. You should see smoke coming from the wood chips. Check on the fire every 15 minutes, adding more charcoal as needed to keep a hot fire going and more wood chips if needed. Rotate the pan of tomatoes occasionally so that different sides are closest to the heat. Smoke the tomatoes until they’re very soft, their skins are darkened, and they’ve released their juices, 45 to 75 minutes. Remove the pan from the grill and let the tomatoes cool slightly.

Roasted Eggplant in Smoky Tomato Sauce

Peel the tomatoes and puree them in a blender or food processor. Remove the eggplant flesh from the skin with a fork discard the skin, and coarsely chop the flesh.

Heat the olive oil in a large nonreactive skillet. Add the onion and cook over high heat, stirring frequently, until softened and lightly browned around the edges, 3 to 5 minutes. Stir in the cumin and turmeric to lightly coat the onion. Add the tomato puree, reduce the heat to low and simmer, covered, until slightly thickened, 12 to 15 minutes. Stir in a little water if the sauce is too thick. Add the eggplant, sugar, 1 teaspoon salt and a pinch of cayenne. Cover and cook over low heat for 10 more minutes. Season with salt and cayenne, garnish with cilantro and serve with lemon wedges.


Recipe Steps

1: Set up your grill for indirect grilling and heat to medium.

2: Arrange the tomatoes, bell pepper (if using), onion, garlic, and celery (if using), in a large aluminum foil drip pan. Drizzle with olive oil and season with salt and black pepper.

3: Place the vegetables in their pan on the grill away from the heat. If enhancing a charcoal fire, add the wood chunks or chips to the coals if enhancing a gas grill, place the chunks or chips in your grill’s smoker box or place chunks under the grate directly over one or more burners. Close the grill lid. Smoke the veggies until the tomatoes are soft and smoky, 12 to 20 minutes. Note: You can also smoke the veggies low and slow in a smoker following the manufacturer’s instructions: You’ll need about 1 hour.

4: Remove the pan from the heat and let the vegetables cool, then transfer to a cutting board. Some people like to remove the tomato skins—I don’t bother. Finely chop the tomatoes and set them aside. Finely chop the pepper (if using), onion, garlic, and celery (if using).

5: Heat 2 tablespoons of olive oil in a large saucepan. Add the grilled pepper (if using), onion, garlic, and celery (if using), and cook over medium-high heat until golden brown, about 3 minutes, stirring often. Can you turn potatoes into a main course? Absolutely. In this recipe of Grilled Potatoes in a Smoky Tomato Sauce we´re doing just that. These grilled potatoes have the most incredible texture & flavor and the smoky tomato sauce takes them over-the-top.


Once again, we are grabbing the humble potato and creating an extraordinary dish. Like I said, you can serve these spuds as a main course, but they also work great as a tapas appetizer or even as a side dish.


To make this recipe, I used yukon gold potatoes, but you can use any potatoes you like. The secret to the smoky tomato sauce is using a Spanish paprika from La Vera. It has an incredible depth of flavors and is what makes this dish.


TIPS & TRICKS to Make this Recipe: Don´t over boil your potato wedges, otherwise they will fall apart and the entire dish won´t work. Usually between 14 to 15 minutes does the trick. I grilled the potatoes on a grilling pan, but you can totally grill them on the bbq.

Homemade Roasted Tomato Sauce

If you’re like me, you often have a huge crop of fresh tomatoes in your garden in the late summer months. I had nearly 50 pounds of tomatoes from my garden this year, so I decided it was time to make good use of them and make some delicious homemade roasted tomato sauce. I love a good homemade tomato sauce, but by smoke roasting the tomatoes first, this sauce takes on a whole new flavor that is out of this world. Not only is this sauce delicious right after it’s made, but you can store it in the fridge or freezer for later use.

If you are a fan of the canning process, this sauce can be preserved in mason jars. I recommend following the safety guidelines in this document to help you safely process your tomato sauce. We often eat our way through the sauce before it will go bad in the freezer, so I opt for storing the sauce in quart-sized freezer bags. This sauce should last for 6 weeks in a regular freezer, or up to 6 months in a deep freezer.

Traditional chiles rellenos are dipped in a light egg batter and fried. Here, we keep the same crisp outside but take away extra fat and calories by baking the stuffed, breaded chiles.

Ingredients

Chiles rellenos

  • 6 large poblano chiles
  • 2 tsp. vegetable oil
  • 1/2 medium onion, chopped (1 cup)
  • 1 medium zucchini, chopped (1 cup)
  • 1/2 cup fresh or frozen corn kernels
  • 1 cup shredded low-fat Cheddar or Monterey Jack cheese
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1/4 cup chopped cilantro
  • 1 lime, cut into 6 wedges
  • 1/4 cup low-fat sour cream or plain yogurt
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 28-oz. can whole tomatoes
  • 1 canned chipotle chile in adobo sauce, drained

Preparation

1. To make Chiles Rellenos: Roast and peel chiles. Cut 3-inch slit in each chile, and remove seeds with spoon.

2. Preheat oven to 425°F. Heat oil in skillet over medium heat. Add onion, and cook 5 minutes, or until soft. Add zucchini and corn, and cook 5 minutes more. Season with salt, if desired. Transfer to bowl, and stir in cheese.

3. Stuff each chile with 1/2 cup zucchini mixture. Secure closed with toothpicks.

4. Whisk egg with 1/2 cup water in bowl. Spread breadcrumbs on plate.

5. Dip chiles in egg wash. Coat with breadcrumbs. Place on baking sheet, and bake 15 to 25 minutes, or until golden.

6. To make Sauce: Heat oil in saucepan over medium heat. Add onion, chili powder, and cumin, and cook 4 to 5 minutes, or until onion is soft and spices are fragrant. Add tomatoes, and simmer 10 minutes, breaking up tomatoes with spatula or wooden spoon. Transfer to blender, add chipotle chile, and blend on low speed until Sauce is smooth. Serve Chiles Rellenos with Sauce, cilantro, lime wedges and sour cream.
