Microwave Chicken Fajitas

A simple blend of mesquite spices, sliced onions and peppers, and seasoned chicken can be nuked to fajita perfection in about 15 minutes. Warm some tortillas, and dinner is all set.

Ingredients

  • 2 Microwave Chicken Fajitas
  • 2 sweet onions, sliced
  • 2 Tablespoons minced garlic
  • 1 1/2 Pound boneless, skinless chicken breasts, sliced
  • 1 Tablespoon chile powder
  • 1 Tablespoon ground cumin
  • 12 flour tortillas
  • 1/2 Cup sour cream
  • 1/2 Cup salsa

Fajita toppings of choice:

For these Chicken Fajitas you’ll need to take your green and red peppers and cut them into slices and throw them in a 2.5 qt dish that is microwave safe (and has a cover). Then add your onion slices as well.

Sprinkle well with a taco seasoning packet.

Use either a package of chicken tenders or cut 2 chicken breast in long strips. For this recipe, I used chicken breast cut because that’s what I had in the refrigerator.

Shake the seasoning over the chicken well. Cover and put in the microwave for 10 minutes on high.
