How to make goji berry cookies

Put the flour, butter into small pieces, egg, vanilla, sugar and baking soda in a bowl and start working.

Prepare the goji berries, cut the chocolate into cubes and add them to the dough.

2 eggs
milk to taste


Preparation:
Pour the flour and water into a bowl. Stir until a pasty cream is created.
Alternatively, pour all the above ingredients (flour, sugar, eggs and yeast) with a little milk in a container and mix with a whisk, gradually adding the milk until a cream is created.
Pour the cream into a waffle iron and cook for about 5 minutes.

Take one piece at a time and pour over a handful of berries and goji syrup, then overlap another piece and repeat the operation until you get to the last one.

GRANCEREALE WITH GOJI BERRIES AND COCONUT + FRAPPÈ WITH PINEAPPLE AND GOJI JUICE

Ingrediants:
- for biscuits:
100g of rolled oats
150gr of wholemeal flour
50gr of goji berries
80g of cane sugar
50g of butter
30g of coconut flour
1 egg
milk

- for the milkshake:
150gr of low-fat pineapple yogurt
150gr of milk
20ml of goji juice

Preparation:
Put the oat flakes in the mixer to chop them lightly, mix them in a bowl with the coconut flour and the whole wheat flour (or you can use a cereal flour or even a simple durum wheat flour), add the sugar and mix with the butter. softened and an egg. Soften the goji berries with a tablespoon of milk, chop coarsely with a knife and add to the mixture. If necessary, add a couple of tablespoons of milk to mix the dough. Let it rest in the fridge for about half an hour and form the biscuits. You can create balls by unimidovi your hands and squeezing them to give the flattened shape or you can roll out the dough between two sheets of parchment paper and unmold the cookies with the mold. Place on a baking sheet lined with parchment paper and bake for about 15'-20 'at 180 & # 176 until golden. Freshly baked they will still feel soft but once cooled they will be crunchy and crumbly, so keep them in an airtight glass jar or tin box.

Wholemeal biscuits with goji berries without butter

  • Preparation: 5 minutes + 20 minutes dough rest
  • Cooking: 15-20 minutes
  • Calories: 400 for 100 g

Ingredients for about 50 pieces

  • 240 g of wholemeal soft wheat flour
  • 60 g of oat flour
  • 80 g of sugar

First thing to do:

Cookies with goji berries and nuts

Last weekend we finally had the opportunity to try Goji berries thanks to a collaboration I was finally able to taste both the berries and their juice, 100% pure.

The Goji (Lycium barbarum) is a shrub that grows mainly in the NingXia region of China. The Goji plant can reach a height of three meters and produces small, deep red berries with an ellipsoidal shape.

The Goji berries, also known as Tibetan berries or Himalayan wolfberries, possess almost "miraculous" properties by virtue of the feeling of well-being that they are able to bring to those who consume them.

The little red berry is good either dried that fresh and contains numerous precious active ingredients such as beta-carotene, lutein and zeaxanthin, vitamin B1, vitamin B3 (Niacin), Selenium, minerals, amino acids, over 22 polysaccharides that strengthen our immune system and help the body to prevent and fight infections .

For example, it contains 4000% more antioxidants than oranges. The antioxidants present in our body help fight free radicals and oxidative stress, factors that accelerate cellular aging. Oxidative stress compromises the regular function of cells and free radicals can cause various damages, especially at the DNA level. Goji berries can be eaten dry but can also be rehydrated, for example by soaking them in water or milk for 10 minutes, in yogurt (15 minutes) and used as a supplement for tea or herbal teas.
They are also excellent as a base for an infusion. Pour a couple of teaspoons of berries into a cup and leave to infuse with boiling water for 8-10 minutes, then sweeten as desired with sugar or honey.

  • 400 g cod fillet
  • 25 g Goji berries
  • 2 medium onions
  • extra virgin olive oil
  • 10 g pine nuts
  • 1 tablespoon of breadcrumbs

Heat 2 tablespoons of oil in a pan then brown the cod cubes on all sides for a few minutes. Remove the cod from the pan and keep it warm.
In the same pan, brown the onions cut into thin slices and let them cook until they become soft and salty but not too much (be careful, the cod is already very tasty so do not overdo it with salt).
Soak the berries in warm water for 10 minutes. In a small pan, toast the pine nuts for a few minutes without adding anything.
In the same pan, toast the breadcrumbs with a tablespoon of oil. Heat the oven to 150 & # 176C.
In a baking dish put the onions on the bottom and place the cod cubes on top. Then sprinkle the cod with breadcrumbs, add the pine nuts. Bake at 150 & # 176C for 30-35 minutes.
Ten minutes before the end of cooking, add the Goji berries on the cod so that they do not dry out too much while maintaining their sweet taste in contrast with the salty of the rest of the dish. Furthermore, by avoiding cooking them for too long, we maintain their precious qualities.
Serve hot.

Line a baking sheet with parchment paper.

With the help of two spoons, make balls that you will then crush with the back of the spoon. The cookies must be well spaced from each other.

Bake at 160 & # 176 for 12 - 15 minutes, I suggest you check the doneness in the last few minutes because it varies a lot from oven to oven.

Remove from the oven and place the cookies on a grate so they can lose all the moisture.

Your cookies are ready.
If you don't finish them all, I advise you to put them in an airtight container since they suffer so much from humidity. The risk is to end up with mushy biscuits the next day.
