Pancakes with spinach and mushrooms
Use your hands to remove excess liquid from the spinach. Heat the oil in a non-stick pan over medium heat. Add the spinach and mushrooms and cook stirring for 5 minutes or until the mushrooms have softened. Add the milk and leave the mixture on the fire, stirring for another 2-3 minutes or until it is hot enough. Taste and season with salt and pepper. Remove from the heat and allow the mixture to cool.
Add 1 teaspoon of chives and water to the pancake mixture. Prepare the pancake mixture according to the instructions on the package. Heat the oil in a 20cm non-stick pan over medium heat. Pour 60ml (1/4 cup) of the dough into the pan and tilt it to cover the entire bottom. Bake the pancake for 2 minutes on both sides until golden. Transfer the pancake to a plate and cover with foil. Repeat the process 7 more times with the rest of the dough, to get the other pancakes.
Divide the pancakes on serving plates and fold them in half. Fill with the spinach mixture and the folds once more to close the filling inside. Sprinkle with remaining chives and serve immediately.
Pancakes with mushrooms and mozzarella
We wash the mushrooms and cut them into cubes.
Finely chop the onion and put it to harden in 50 g butter, and when it starts to brown, add the mushrooms and let them soften for a few minutes, then quench with 100 ml of wine. Let the wine evaporate, add a little salt, pepper and 100 ml. vegetable soup, then let the liquid drop on the fire.
Add the Parmesan cheese, mix and remove from the heat. A bound, velvety sauce must form.
With the remaining butter (50 g) grease a tray well and place the pancakes filled with the mushroom composition in the pan. We pack the pancakes like cigars.
