Socca is like a thin pancake made of chickpea flour

Recipe Courtesy of Dr. Josh Axe

I’ve done a ton of interviews, and one of the most common questions I get asked is, “What is your guilty pleasure?” People assume that even though I teach people to eat a healing diet that will help treat chronic conditions like leaky gut syndrome and change their entire lives, I must have cheat days where I gorge on unhealthy junk like pizza. But the truth is that pizza is actually one of my favorite foods, and I do have it pretty often. I just make it from scratch using this grain-free, high-fiber socca recipe.

If you’ve never heard of socca, it’s similar to a thin pancake made of chickpea flour. And while it’s only beginning to gain popularity in America, street food vendors in Italy have been selling this nutty and nutritious treat for many years. In keeping with Italian food traditions, I love making socca a little thicker and then using it as a pizza crust. I keep it healthy with the toppings, too, opting for goat’s milk feta instead of mozzarella made from conventional dairy. I also love to add crushed red pepper, as it’s one of my favorite fat burning foods.

And the best part about socca? It’s a cinch to make. No need to proof yeast or roll out dough into the perfect shape. Simply combine chickpea flour with water and health-boosting avocado oil, let it sit for an hour, and then pour it into a pan to bake. At that point you can top it with your favorite flavors—without ever succumbing to greasy takeout.

  • 1/2 Teaspoon pepper
  • 1/2 Teaspoon garlic
