If you are yet to experience the joys of crispy smashed potatoes, and my first experience was only 3 years ago when I was introduced to them by Claire from Sprinkles and Sprouts, a fellow Australian food blogger, these are going to change your potato game forever.

These taste like buttery french fries, albeit they are look completely different. “Rustic”, I declare loftily. They’re fluffy on the inside, and ultra crispy on both the underside and on the surface. All those ridges are the best! Forget squashing them neat and flat – the more nubbly the surface, the better the crunch.

Family-sized Oven Roasted Rosemary Potatoes

  • 3 pounds Yukon Gold potatoes cut in 1-inch chunks or wedges
  • 2 large sweet onions chopped in large pieces
  • 1/4 cup vegetable oil
  • 2 teaspoons dried rosemary roughly chopped
  • 1/2 teaspoon garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground black pepper

Place a rimmed sheet pan in the oven and preheat oven to 400 degrees F.

Cut the potatoes in half or quarters and place in a large bowl. Peel and chop the onions in large pieces and add to the potatoes.

Add the oil to the bowl with the potatoes and onions and toss until the vegetables are well coated. Evenly sprinkle with the salt, pepper and rosemary and toss again to evenly distribute the seasonings.

Carefully pour the vegetables onto the sheet pan and spread out into 1 layer. At 15 minutes and again at 30 minutes, stir with a spatula to change sides of vegetables in contact with hot pan.

Roast in the oven 45 minutes to 1 hour or until potatoes are fork tender, brown and crisp. Remove the potatoes from the oven, season with salt to taste and serve hot.

When you open a can of potatoes drain out the water. Rinse the potatoes well. You want to rinse off the liquid they were in. This will keep the liquid that they were stored in from influencing your recipe.

These golden potatoes take about 25 minutes to cook and for them to turn a lovely color. You could modify this recipe by the herb mixture you add to this recipe. I personally like this with Penzey’s Fox Point seasoning, but I bet they would be great with a dry Ranch salad dressing mix as well.

How to give breakfast potatoes a flavor boost:

  1. heating the oil and butter up with a smashed clove of garlic, a few sprigs of thyme and rosemary. That one minute of time when the oil heats up and the herbs start to sizzle adds so, so much to these breakfast potatoes. I don’t do this all the time. But whenever I’ve got fresh herbs around the house for other meals, I sneak a few sprigs into my skillet to really make these breakfast potatoes a little more special.
  2. make sure to use at least a 12-inch skillet if you’re making the full recipe for these potatoes. You want them to cook in a single layer so they have enough room to move around and crisp up.
