Ingredients

  • 1 6-ounce can tomato paste
  • 3 tablespoons chopped canned chipotle chilies
  • 1 tablespoon mild-flavored (light) molasses
  • 12 3/4-inch-thick slices sourdough bread
  • 18 ounces extra-sharp New York cheddar cheese, thinly sliced
  • 4 plum tomatoes, cut into 1/4-inch-thick slices
  • 1 small red onion, thinly sliced
  • 1 cup fresh cilantro leaves
  • 6 tablespoons butter, room temperature

Recipe Preparation

  • Blend tomato paste, chilies, and molasses in processor until smooth. Spread 1 tablespoon chipotle mixture over 1 side of each bread slice.

  • Arrange 6 bread slices, chipotle side up, on work surface. Divide half of cheese among bread slices. Top with tomatoes, then onion, cilantro, and remaining cheese. Top sandwiches with remaining bread, chipotle side down. Spread butter on outside of sandwich tops and bottoms.

  • Heat 2 large griddles over medium heat. Place 3 sandwiches on each griddle; cook until bread is golden and cheese is melted, about 5 minutes per side.

How do you like your burgers? I love mine nice and medium rare…not a second over or they are too done for me. I absolutely love my burgers cooked on the grill, don't you? There is the amazing smell and the sound of the sizzle and popping when the fat hits the hot coals. Oh my heck yes!

And then to dress it up? There are so many delicious, mouthwatering toppings to choose from! Some of my favorites are lettuce, tomato, crispy dill pickles, mayo and ketchup. Or, for a California-arylw burger, how about some sprouts and avocado slices?

And that is just the tip of the proverbial iceberg(er!) Oh goodness, now I am drooling just at the thought!

Another favorite is a good old fashioned grilled cheese sandwich. When I was growing up, mom would make my sister and I grilled cheese with tomato soup and chocolate milk. This is another beloved sandwich you can do so much with.

As a child, I would only eat my grilled cheese with two slices of American cheese. As an adult, I have discovered there are so many cheese that make the perfect oeey, gooey grilled cheese sandwich. I especially like a smoky Gouda and a creamy Havarti. Talk about cheesy!

Crud..now I want a grilled cheese…or do I want a burger? If only I could combine the two!

Well, welcome to my idea of Nirvana: a Spicy Cheeseburger Grilled Cheese Sandwich! This is the perfect marriage of two classic sandwiches. The idea of this glorious sandwich absolutely makes my mouth water and my tummy grumble.

What makes this sandwich extra gooey and delicious is that we use THREE kinds of cheese in it: Gouda, Havarti and Cheddar. Of course you're free to use whatever type of cheese you prefer, but we really love this combination!

And it is so easy to make! We make a lot of dishes with ground beef, so I will have Ziplock bags of it in my freezer. When I want to make this Spicy Cheeseburger Grilled Cheese Sandwich recipe, I can defrost a bag and have it ready that much more quickly.

We have made these several times using jalapenos. But not everyone likes jalapenos, or is afraid they will be too hot, even when you remove the seeds.

The solution? Sweet Mini Peppers.

We spiced up our cheese filling just a little with our fave new spice blend, SoLa Seasoning. Since the cheddar and bacon have a lot of sodium, we used SoLa's low-sodium blend. Perfect!

You can use a full strip of bacon to wrap your sweet pepper poppers with, but sometimes that is a little much.

I mean, not sure there is such a thing as too much bacon.

But by the time you get the bacon fully cooked and fight off the grill smoke, the cream cheese finds a way to seep out.

This time, we cut our bacon in half lengthwise. This allowed us to get the Sweet Pepper Poppers securely wrapped, in one even layer. The bacon cooked nicely and the cheese filling stayed intact.

Chiles Rellenos Hit the Grill

Warning to all you carnivores out there. The following blog and recipe are vegetarian. But I promise you won’t miss the meat.

Raichlen’s rule holds that if something tastes good boiled, baked, sauteed, or fried, it surely tastes better grilled.

This traditional Oaxacan dish—poblano chiles stuffed with cheese (and sometimes ground beef) and deep-fried in egg batter—puts 450 calories on your waistline and 37 grams of fat into your arteries. And that’s per chile! Which makes this the sort of dish you indulge in from time to time, but not the stuff of a sustainable diet.

Now, I fry with the best of them, but on a daily basis, when I can I try to eliminate excess fat from my diet. One of my favorite strategies to achieve this is to smoke-roast on the grill. Another is to replace part of the cheese with pinto beans, which has the added advantage of boosting fiber and protein.

There’s a third benefit: my grilled chiles rellenos taste cleaner than the traditional version—the bright flavors of cumin and cilantro, of walnuts and raisins unobscured by a film of fat. So here are grilled chiles rellenos you can eat once a week. They’re so good, you may just want to.

The traditional chile for stuffing is the poblano, an aromatic dark green-skinned capsicum with more bite than conventional bell peppers. You can also use elongated Anaheim or fiery Hatch chiles.

You can even vary the ethnic profile by changing the spicing and beans. For a North African version, for example, use chick peas spiced up with coriander, turmeric, and paprika. For a French version, substitute flageolets and goat cheese.

Whatever the filling, you can call this barbecue health food. Your vegetarianfriends will love you, and hard core carnivores will appreciate it, too.
