  • 2 tablespoons water
  • 3 tablespoons cooking oil, divided
  • 2 teaspoons garam masala
  • 1/4 teaspoon Indian chilli powder
  • 250g passata
  • 125ml double cream
  • 125ml milk
  • 2 tablespoons butter
  • 1 teaspoon dried fenugreek leaves
  • 1 teaspoon salt

  1. Stir the yoghurt and tandoori masala powder together in a large bowl until thoroughly combined; add the chicken and toss to coat evenly. Marinate in refrigerator for 1 hour. Drain and discard any excess marinade.
  2. Puree the onion, ginger and garlic with the water in a blender until it forms a smooth paste; set aside.
  3. Heat 1 tablespoon oil in a large frying pan over medium heat. Cook the chicken in the hot oil until lightly browned on all sides, about 5 minutes. Remove from pan and set aside. Heat the remaining 2 tablespoons in the pan. Fry the onion paste in the hot oil until the moisture is mostly evaporated, about 3 minutes. Sprinkle the garam masala and chilli powder over the mixture; cook 1 minute more. Pour the passata into the mixture, reduce heat to medium-low, and cook another 5 minutes. Return the chicken to the pan along with the cream and milk; bring to the boil. Add the butter, fenugreek leaves and salt; reduce heat to low and simmer uncovered until the chicken pieces are no longer pink in the middle, 15 to 20 minutes.

What is Curry Powder?

Curry powder, a blend found easily in U.S. supermarkets and all around the world, is actually a Western invention, attached to the British Colonial government in the 18th and 19th centuries. It’s really a shortcut product designed to allow those without large spice pantries or deep knowledge of Indian food approximate homemade spice blends.

Skilled Indian chefs are usually not big fans of commercial curry blend, but I think that whatever gets a cook to try his or her hand at Indian food is a-ok.

Having said that, I have some wild spice allergies, and can’t feel safe with prepackaged spice blends, so I always make my own.

Curries may container meat, poultry, vegetables, fish, vegetables, a combination of some of the above. Curries may be wet or dry, though most commonly they have some sort of sauce. The term curry extends to dish outside of the Indian Subcontinent, Southeast Asian countries in particular, but that’s a whole other topic (think coconut milk curries).

Butter Chicken is a Northern Indian dish, and a close cousin to Tikka Masala. The sauce is a rich and creamy tomato base with aromatics that include garam masala, ginger and a few other spices. Chicken thighs are coated in yogurt that, when broiled, mimics the char flavor of a traditional tandoori oven. Served with rice or warm naan (bread), this is a flavorful meal. As for heat? The serrano chili adds a touch of heat, but doesn’t turn you into a fire breathing dragon! I can’t rave enough about how much we loved this recipe. If you love Indian food, then this is the recipe for you!

My husband loves Indian Food. My exposure to it was very minimal, given that I had a German mom whose repertoire pretty much stuck to her Bavarian roots. I had it in my head that Indian food is all about yellow curry, so I avoided it as much as possible.

I now realize, now, how wrong I was! I have overcome my silly childhood aversion to curry. Year ago, I made Tikka Masala. Actually, Tikka Masala is not an authentic Indian dish, but one that was invented in the UK in the 1960’s. It’s a tomato based sauce that has a key spice called Garam Masala. I am smitten with that spice blend, and have used it to season many dishes– including rice.

Butter chicken is a recipe I’ve seen floating around on the internet for a long time. The name of the dish made me think of chicken cooked in butter. Was I ever wrong! Butter Chicken is a Northern Indian dish, and a close cousin to Tikka Masala.

We have Kundan Lal Gujral to thank for creating what we know today as murgh makhani, or butter chicken, in 1948. Gujral ran a legendary restaurant in Delhi called Moti Mahal and needed a way to use up another popular creation of his, tandoori chicken. To prevent the already-cooked meat from drying out, he slowly stewed it in a gravy of tomatoes, aromatic spices and—you guessed it—butter. (source)

Now that I’m learning there’s a lot more to Indian cooking than just curry, I’m beginning to really like that cuisine. I wanted to surprise my husband, so I made this for his TGIF end of the work week dinner.

I much prefer chicken breasts, but in this case, don’t do it! You need to use boneless, skinless, chicken thighs. If you use chicken breasts, you will have dried out meat and that won’t be pleasant. Trust me.

There is going to be some “heat” to the sauce, so you need a serrano pepper. (Yes, you can use a jalapeno pepper, if you wish.) I was a little nervous that it would spice up the sauce more than my delicate palate could handle. SPOILER ALERT: It didn’t!

The sauce is easy to make, once you invest some time chopping and prepping onion, garlic, ginger, peppers and aromatics.

The onions, garlic, ginger and peppers are cooked until softened and just slightly browning.

The aromatics are garam masala, cumin, coriander and pepper.

The spices are “bloomed” until fragrant! Sniff. Mmmmmm….

For the sauce, there’s a generous amount of tomato paste and water added. Off heat, heavy cream is added.

To make a creamy sauce, I used my immersion blender (or you can use a blender, in batches). Done! I took a taste and, wow, is that sauce ever delicious!

You can make this sauce up to four days in advance, and slowly reheat on the day you cook the chicken.

The chicken prep could not be simpler. You will need to use full-fat Greek yogurt (not regular yogurt). The idea is that the yogurt will make the broiled chicken mimic the char of chicken cooked in a Tandoor (something most of us do not have, I am betting).

It took about 20 minutes for the thighs to broil until it reached 170F. Perfect! I cut them into chunks and added them to the sauce.

I added fresh cilantro and stirred it with the broiled chicken. Dinner is ready!

I served this with basmati rice and homemade naan . I summoned my husband for dinner (though the aroma already had him on hunger alert.)

TASTING NOTES: I play the “rating game” with my husband, who gives me honest feedback on new recipes that I make. “Five” is the highest rating and he doesn’t give them all the time (“Four” is his average, and I still consider that to be a compliment.) “Ten!” Yes, he loved this dish. As for me, I thought it was one of the tastiest sauces I’ve ever made. I love tomato based sauces, and this one had just the right amount. It was the spices that took front and center, and the “heat” was spot on– it was subtle, but not overpowering. The chicken was moist and we both went back for half portion seconds. It was that good!

The homemade naan bread was perfect for soaking up the delicious sauce!

COOKING TIPS: I was pretty tired, as it took three hours to make both recipes. I think I was a bit too ambitious to make two new recipes that I wanted to be ready at the same time. Making the sauce, kneading naan dough, broiling chicken, rollout out naan dough, stirring, baking, cooking– I was definitely mopping my forehead and I felt like I was on an episode Food Network Iron Chef episode! My husband is already hinting that he hopes this dinner will be a repeat performance. Yes, it will– but next time: Make the sauce at least one day ahead. Make the naan dough the day before. The day I’m serving, make the chicken (easy), roll out each naan and cook in a matter of minutes. Other than that– make this! It’s one of our favorite recipes!


Process

  1. Place chicken thigh pieces in a mixing bowl, add some cumin, coriander, a sprinkle of salt, and some cracked black pepper and toss together until chicken is well coated.
  2. Place a large skillet over medium-high heat and melt some butter.
  3. Add chicken and sauté.
  4. Using a slotted spoon, transfer chicken to a plate and set aside.
  5. Add remaining butter to skillet. Add shallot, garlic and ginger and sauté.
  6. Stir in remaining spices and continue to sauté.
  7. Stir tomato puree into skillet and lightly season with salt and pepper.
  8. Lower heat and simmer.
  9. Stir chicken back into skillet, season with salt and pepper and continue to simmer.
  10. Stir cream or yogurt into chicken mixture and simmer until sauce is thick (enough to thoroughly coat chicken) and creamy. Adjust seasonings.
  11. Top with chopped cilantro and serve over basmati rice, with a side of grilled pita bread.

For a smooth sauce: Blend sauce mixture from step 7 in blender until smooth. Pour sauce back into skillet and bring to a simmer over medium-low heat. Stir chicken back into skillet, from step 9 and continue from remaining recipe directions.

Recipe Notes and Tips

  • More you marinate the chicken, more flavour it absorbs. From one hour to overnight you can marinate as per your convenience. If in pinch you can make it immediately after marination.
  • You can either grill chicken in oven or pan fry to make it crispy that makes it taste good. However if you want to make it without grilling it’s your taste preference actually.
  • I always cook the chicken pieces in pan on medium heat for 5-6 minutes until they are 80% cooked and then make the sauce.
  • Making the creamy sauce for butter chicken is my favourite part of the recipe. This time while I was cooking the gravy instead of using cashew (cashew is typically used while making the gravy) I used 2 tablespoons of melon seeds and around 10 almonds. I swear, this gave my gravy a creamier texture than regular.
  • Never skip using kasuri methi (dried fenugreek leaves) for authentic taste. That is a must!

Lemon Juice – 1 tbsp
Red Chili Powder – to taste
Salt – to taste
Yogurt – 1/2 cup
Ginger & Garlic Paste – 4 tsp
Tandoori Masala – 2 tsp
Unsalted Butter – 1.5 tbsp
Garam Masala – 1 tsp
Big Cardamom – 1
Green Cardamom – 2
Cinnamon Stick – 1″ pc.
Bay Leaf – 1
Tomatoes – 3 large, pureed
Sugar – 1 tsp or to taste
Dried Methi Leaves (Kasoori Methi) – 1 tbsp
Green Chili – to taste, finely chopped
Heavy Whipping Cream – 1 cup or to taste
Cilantro – 3 sprigs, finely chopped

1. Cut the Chicken to bite-size pieces and wash it well.
2. In a bowl (or large Ziplock bag) add the following – Lemon Juice, 2 tsps of Ginger & Garlic Paste, Tandoori Masala, Red Chili Powder, Salt and Yogurt.
3. Mix well and marinate in the refrigerator overnight for best results or atleast a couple of hours.
4. Grease a broiler dish with ghee, oil or cooking spray and layer the Chicken in a single layer. Broil on high for 5-7 minutes on each side. Keep an eye on it as every oven varies. The size of the chicken pieces makes a difference and where you place the rack in the oven plays a big role in how long the chicken needs to be cooked.
5. For the gravy, in a medium size pan on medium heat, melt and heat the Butter.
6. Once hot, add the Cardamoms, Bay Leaf and Cinnamon Stick. Fry for 1 minute.
7. Add the balance of Ginger and Garlic paste and fry of 30 secs.
8. Add in the Green Chilis and the Tomato Puree. Mix well.
9. Add in the Salt, Red Chili Powder and Garam Masala and mix well.
10. Allow it to come to a boil and then lower the heat and let the gravy simmer for 10 minutes till most of the juice from the tomatoes evaporates.
11. Add in the Sugar and the Dried Methi Leaves and allow it to cook for another 2 minutes before adding broiled Chicken pieces. Mix well to coat Chicken.
12. Add the Whipping Cream, mix and allow it to come to a boil and take it off the flame.
13. At this point, do a taste test and adjust the salt, sugar and the liquid in the gravy.
14. Mix in half the Cilantro in the dish and garnish the balance while serving.

1. Don’t have access to a broiler dish? – no problem…use metal skewers or wooden ones(soaked) or just barbeque them on the grill.
2. Great alternatives to making this dish everyday and not feeling guilty about it –

* Use Chicken Breast instead of Chicken Thighs, but make sure you baste the Chicken Breasts while broiling or they will dry up.
* Use Oil instead of Butter.
* Substitutes for Heavy Whipping Cream – Half and Half, Evaporated Milk, Lactaid, Milk or Milk Powder (so you can control the water).


Butter chicken recipe made with leftover tandoori chicken

As one of our friends was expected for dinner to our place, I wanted to cook something simple, delicious and fast.

For lunch we had tandoori chicken. So, the perfect, quick, easy and delicious recipe that came in my mind was Butter chicken with leftover tandoori chicken.

This is great about tandoori chicken that you can reuse it and turn it into a delicious butter chicken dish. Yum! Our friend loved it.

I have cooked in the past butter chicken without tandoori chicken already made, but the taste is just not the same. I think one of the secrets for a perfect butter chicken is tandoori chicken – using the grilled chicken with spiced yogurt marinade.

This recipe is not the healthiest recipe but for an occasional treat, this is definitely a hit!

Step by Step Butter Chicken Recipe

In a pan heat oil and add chopped onion. Fry for about 4 minutes until it starts to change colour.

Add tomatoes puree, mix and let it cook for 2-3 minutes. Once the tomatoes released its juices, add ginger garlic paste, salt and all the powder spices. Let it cook until oil starts to separate.

Now add cashew nuts paste, stir fry for one minute.

Add tandoori chicken and 2 cups of water. Mix well and bring to a boil then lower the flame and cover the pot with a lid. Let it simmer for 10 minutes.

After 10 minutes, add butter and stir together. Add 1 tbsp fresh cream. Now the butter chicken is ready to serve!

Place the butter chicken into a serving bowl, drizzle a bit of extra fresh cream and garnish with green chillies and coriander leaves. Serve it hot with steamed rice, jeera rice or naan.

You can eat this dish however you want. Either serve it with naan, tandoori roti, bread, kulcha or steamed rice. The choice is completely yours.
