Method of preparation:
The leaves must be clean and completely dry. Put in a blender or food processor with oil and salt and mix until it reaches the consistency of a puree. Store in the refrigerator in a glass jar with a layer of olive oil on top, but it is best to use it within a week to prevent the growth of bacteria. The best method of storage for longer periods is by freezing, they can be portioned or frozen in ice trays, then the frozen pieces are placed in a bag with a closing system.
Dressing with leurd
Put a handful of leurda leaves in a blender and cover with 3 parts olive oil and 1 part cider vinegar or lemon juice. Mix and use as a sauce or dressing for any dish or salad. For a creamier sauce you can add a tablespoon of sesame paste (tahini) or Dijon mustard.
Hummus from leurd
Ingredients (2-4 servings):
2 green zucchini dogs (zucchini)
1 handful of leurda
¾ cana tahini (sesame paste)
¼ cup of olive oil
½ cup lemon juice
1 teaspoon cumin powder and 1 teaspoon paprika
Method of preparation:
Mix all the ingredients & # 8211 can still match the water if the zucchini does not leave much liquid. Sprouted chickpeas can also be used, but in order to be easier to digest, it is good to cook them a little steamed beforehand or kept in hot water, at the limit of boiling, for about 5 minutes to soften. They will no longer be raw, but they are still healthy and easy to digest.
Pesto from leurd
2 hands of leurda
1 link parsley (to neutralize the smell of garlic!)
2 cups hydrated nuts or seeds
You can choose between almonds, walnuts, hazelnuts, hemp seeds, pumpkin seeds and sunflower
Cold pressed organic oil as appropriate
of olives, hemp or pumpkin

It can also be frozen, in portions, in bags with closing system.
Soup with leurd
Ingredients (4 servings):
1 mana de leurda
3 cups parsley or celery root
1 cup fennel bulb
2 celery stalks
½ cup hemp, hydrated nuts or avocado pulp
¼ cup olive oil & 1 teaspoon lecithin (both optional)
1 green hot pepper or ½ teaspoon chili powder (optional)
1 teaspoon of white miso or salt
4 cups hot water
Method of preparation:
First wash the wild garlic and cut. Peel a squash, grate it and squeeze the juice. Place the rest of the ingredients, except the oil, in the blender and mix until hot and creamy. Add a little olive oil to bind the soup and give it an airy texture, or do not use it at all if you want to reduce fat. Pour into two preheated bowls, garnished with leurda pesto and garnish with chopped parsley.
Grilled veal chop in seed crust
Last week I ran a & # 8222session & # 8221 of barbecues in the rain. In fact, I was caught in the rain in the end, but it's not bad, the result of the work was satisfactory enough and the T-shirts change quickly. One of the dishes I put on the grill finds its place in today's article. See:
First I lit the coals. I decided to give up solid spirit, it emits too much smoke, I will learn to use twisted newspapers, I hear that it works perfectly with & # 8222cana & # 8221 de la Weber. On the occasion of the next barbecue, I will pose a tutorial for this, maybe it will be useful to someone, at least to those as "smart" as me.
I took care of the garnish first (I prefer to do without it, although it is tasty, but I can't force my guests to eat meat only with salad). I took a kilogram of new small potatoes, rubbed them well with the dishwashing sponge (with one dedicated to potatoes, not the one soaked in detergent), boiled them in salted water and then mixed them with oil, salt , pepper and rosemary. I put them on the grill and left them under the lid to bake / smoke for about a quarter of an hour.
The meat, veal chop, was cold. To make sure it would be tender after cooking, I took it out of the fridge an hour before putting it on the grill, to get some air, to warm it slightly and to relax. It is good to do this with any kind of meat you want to put on the grill.
Until the meat stayed and while the potatoes were cooking (even after putting them on the grill) I made a sauce for grilling. This sauce goes perfectly with lean meat but seems to go a little better with fatty meats, with pork ribs for example. I made it the first time I had a barbecue in Timișoara and it was successful. I decided to include it in my menu. It's simple (the idea came to me by passing the shelf with jams) to make, it contains few ingredients: raspberry jam, tomato juice and hot peppers.
I mixed the jam with the tomato juice, added the hot pepper and put them all in a pot with a thick bottom. I placed the pot on one side of the grill, in a place away from the heat, to slowly lower it. You can put the pot on the stove but I saved time and movement, which I recommend to you.
In a quarter of an hour, at most 20 minutes, the sauce has dropped properly. ”I remind you, don't rush it, it's better that the fire under the pot is small.
Let's go back to the chop. A month ago (or so) I received a few hemp products for testing. They haven't tied my hands so far, I don't know why. Well, I had started eating raw hemp seeds (I hear they are very healthy but I test them on myself before I tell you more about them) but so far I haven't used them in recipes. I used them now.
I rolled the chops through the hemp seeds.
I put them on the hot grill.
After 3 minutes I turned them over and left them on the other side for about two minutes.
The meat came out tender (after I took it off the grill I let it rest for about 5 minutes, on a covered plate), tasty even if I didn't season it with anything.
The hemp seeds did not disappoint me, they got a good, ripe corn taste. However, I think I will try to use them more raw. If you want to see other recipes that incorporate hemp seeds, tell me, I have some ideas.
HOMEMADE BREAD WITH SEEDS
When it comes to seed bread, I instantly remember an exhibition where I tasted a multitude of types with black or wholemeal flour, with various seeds and of course with a crust so good that you ate it empty without thinking about any diet.
Today I will prepare a homemade bread recipe with seeds where I will use a mix of white and wholemeal flour with a mixture of various seeds - pumpkin, flax, sesame and sunflower.
- 400 gr. White flour
- 200 gr. wholemeal flour
- 250 ml. the water
- 150 ml. Soya milk
- 20 gr. fresh yeast
- 1 teaspoon sugar
- 1 tablespoon salt
- 50 ml. olive oil
- 3 teaspoons seed mix
I start, as usual, with a mayonnaise that I prepare from yeast rubbed with sugar, a tablespoon of flour and very little warm water. After 10-15 minutes it is ready to be incorporated in the mixture of white and wholemeal flour.
I put the salt aside as much as possible so that it does not come into direct contact with the prepared yeast.
Gradually add the water and milk that I heated a little before, then knead the dough until I mix all the flour.
Pour the oil and continue kneading for 10-15 minutes until you get a very thick crust.
When I feel it is almost ready, I add the seeds, knead a few more times to incorporate them evenly, then I test the dough with my finger to see if it is ready. It returns to its original shape so I cover it with a foil greased with oil over which I put a towel and leave it to rise for about 50 minutes.
I sprinkle a little flour on the counter when I turn over the leavened crust, I take the air out of it through a very short kneading and I shape it so that it fits in my cake tray.
I leave it to rise for another 15-20 minutes, after which I grease it with a little water and then sprinkle some seeds and a flour powder.
Bake in two stages in the oven preheated to 210 °.
I will leave the bread for the first time at this temperature for 25 minutes and lower the temperature for another 20 minutes to 190 °.
It really is a very successful bread that is barely enough for 2 days.
